I tend to use butter, coconut oil, or sesame oil. Stop and Shop has coconut oil, it is located in the organic foods aisle, down near the organic butters and such, at least the one in smithfield. Sesame oil is better to cook with from what I read, however, it leaves a distinctive flavor.
Use what your budget can afford. getting off of grains and processed foods is the main thing.

I really enjoyed the first class and went straight to the grocery store to procure some squash because I wanted to make the stuffed acorn dish. I never cooked with coconut oil and was mildly surprised to find it not very oil like. I was expecting to find it in a liquid form not a solid but it works great and I haven't really noticed any coconut flavor interfering with the food. I did learn that Stop and Shop does not carry coconut oil but Homegoods does and it is cheaper than Whole Foods.

Two questions:
1. What other oil is recommended to cook with when using medium to high heat? I know we sort of eliminated canola but I am wondering about grapeseed.
2. In order to stretch our food dollars, is vegetarian fed beef ok? I was at Whole Paycheck and bought a pound of grass fed beef but then noticed they also carry beef that is a mixture of vegetarian and grass fed.

Thanks,
Jim

Great explanation. Chris and I always thought we were eating 'well' because we ate Kashi and thought that it was a great breakfast. Until one day we actually read the label more carefully to discover that all the "good" stuff in it was added (vitamins, etc). So if the good stuff has to be added to make cereal "healthy", how good can cereal be by itself? Not very. We now eat eggs, smoothies (coconut milk+fruit), and/or previous night's leftovers for breakfast :)

Wow. I didn't know all of this. Interesting info. I also don't spend much time making breakfast. I'm lucky if I can squeeze in a bowl of cereal. Also I miss breakfast while living in France. I wrote a post about it: http://travelingmad.wordpress.com/2010/10/31/food-for-the-homesick/
France can do better!
